Iced Christmas Oreo Cookie Recipe
This Iced Christmas Oreo Cookie recipe is the perfect addition to your holiday baking! These cookies are loaded with white chocolate chips and crushed Oreos, then topped with festive sprinkles.
Ingredients
- 1 Cup Unsalted Sweet Cream Butter, cold sliced
- 1 1⁄2 Cups Sugar
- 2 Large Eggs, room temp
- 2 Teaspoons Vanilla Extract
- 1 Teaspoons Baking Soda
- 1 Teaspoons Cornstarch
- 1⁄2 Teaspoon Kosher Salt
- 1 Cup Cake Flour
- 1 3⁄4 Cup All-Purpose Flour
- 2 Cups White Chocolate Chips
- 1 1⁄2 Cups Crushed Oreos Center Filling Removed (see how below )
- 12 Mint Oreo fillings
- 12 Red Holiday Oreo fillings
- 12 Whole Oreos for Garnish
- Holiday Sprinkles
Vanilla Cookie Icing
- 1/2 Cup Unsalted butter, softened to room temperature
- 1 1/2 Cups Powdered Sugar
- 2 Teaspoons Vanilla Extract
Instructions
- Separate your 12 mint Oreos and 12 Red Holiday Oreos by placing the filling circles on a tray and set to the side.
- Stack 1 mint Oreo filling and 1 red filling on top of each other. Set to the side. Place the Oreo cookie part in a sealable plastic bag and crush by using a rolling pin. Set to the side.
- In a bowl of a stand mixer add the butter and sugar. Mix on low for 1 minute then move up to medium until light and fluffy, about 3 minutes.
- Add eggs, and vanilla extract to the sugar mixture, with the mixer speed on low. In a large bowl add cake flour, all-purpose flour, cornstarch, baking soda, and salt, and whisk until combined.
- Slowly add the dry mix into the sugar mixture, mix on low speed. Add in the white chocolate chips, and crushed Oreos and mix on low until combined.
- Using a large cookie scoop, create the dough into large balls and place on the parchment or silicone mat covered baking sheet. Cut each dough ball in half.
- Using your hands, flatten each half to about 1⁄4 inch thick. Place one Oreo cream filling stack in the center of 1 half of the cookie dough.
- Place the second half on top of the half with the Oreo filling. Using your hands, roll the dough into a ball. Place the dough ball on a parchment lined baking sheet. Repeat with all dough balls.
- Place the dough in the refrigerator and chill the dough for 15-20 minutes. Preheat the oven to 410 degrees. Bake for 11- 12 minutes.
- Remove from the oven and allow to cool for 30 minutes.
- Add the butter, powdered sugar, peppermint extract, and vanilla to a large mixing bowl. Whip using a hand mixer until pale and fluffy.
Drizzle the icing on top of the cookies. Top each cookie with holiday sprinkles and an Oreo cookie in the center. Enjoy!
