What You Need to Make Christmas Sweater Cookies
- Cookies
- 1 cup coconut oil, room temperature
- 1 cup aquafaba, about 1/2 cup or 2 eggs (I ran out of eggs so I used bean juice)
- 1 cup sugar
- 1 1/2 tspn vanilla extract, clear
- 2 tspn baking powder
- 3 cups flour
- Icing
- 6 cups powdered sugar
- 1/2 cup aquafaba (or 2 egg whites)
- 1/2 tspn vanilla extract
- Red gel food coloring
- Black gel food coloring
- Green gel food coloring
- Gold Edible Glitter
- Black Edible Marker
- Multi-Colored Ball Sprinkles
- 1/16 teaspoon Vanilla Extract to Mix With Gold Edible Glitter
How to Make Ugly Sweater Cookies
Preheat your oven to 350 degrees.Cream the sugar and coconut oil then add aquafaba (or eggs–again, I was just out of them) and vanilla extract, mixing until combined. Set aside.Sift together flour and baking powder into a second bowl.
Add dry ingredients to the wet ingredients in 1/3 increments, stirring between each increment.The dough will be crumbly, but it’s supposed to be.
Turn out the dough onto a sheet of parchment paper. You do not need to dust the parchment paper with flour as the dough will not stick to it.
Roll the dough flat to approximately 1/4-inch thick.
With a sweater cookie cutter, cut out your cookies.
Remove the excess cookie dough from around the cookies.
Do not try to move the cookies individually, but transfer the whole parchment paper sheet to the cookie sheet.
Bake your cookies for 10 minutes.Transfer the parchment paper to a wire rack and allow the cookies to cool completely.
To make the icing, combine the icing ingredients in a small bowl and beat until smooth.
Place ½ of the icing in a second bowl.With one bowl of icing, add 8 or so drops of red food coloring and stir.
With the other bowl of icing, add 6 or so drops of green food coloring and stir.
Using red icing for half the cookies and green for the other half, pipe an edge line all the way around the outer edge of the cookies. Immediately fill in the shirt, covering the whole area.
Let this layer of icing crust over and dry for 2-3 hours.
Make dots on some of the shirts with the edible food marker.
On some of the other shirts, draw a Christmas tree with the green icing and immediately add sprinkles for ornaments and a star sprinkle at the top on some of the shirts.
With a toothpick, draw a reindeer on some of the other shirts.
To decorate with some gold glitter stripes, mix vanilla extract with some edible glitter in a small bowl.
Simply paint it as you would regular paint.
Allow this final layer of frosting to dry for 2-3 hours.

Before you take off and start baking, though, let’s talk about some frequent questions I get about Christmas cookies.
what happens if you don’t put eggs in cookies?
Well, I have a funny story for you…these cookies don’t have eggs. I ran out and ended-up using aquafaba (bean juice–it’s just the fancy word for the juice off a can of beans) to make them. And there are other egg replacers.
You really have to have eggs or egg replacers in cookies because the egg is the glue that holds the cookies together and keeps them moist when you’re baking them.
So, super critical.
will parchment paper keep cookies from burning?
Um, no. You can still burn cookies while they’re on parchment paper. The best thing that parchment paper does is keeps cookies from sticking. And one of the things that I disliked most about making cookies in the past, was that I would make gorgeous Christmas cookies and then they’d stick to the pan and be ruined.
Parchment paper has changed all of that. You just use parchment paper and your cookies will be in one non-stuck-on-piece when you’re ready to pull them off!
