If you need a low-work, big-batch cookie recipe, these peppermint meltaway cookies make for an amazing choice.
What You Need to Make CHRISTMAS PEPPERMINT COOKIES
- 1/2 C unsalted sweet cream butter, softened
- 2/3 C light corn syrup
- 4 tsp pure peppermint extract
- 6 C powdered sugar
- Red and Green gel food coloring
- 1 C sugar to roll peppermint patties in

Combine the peppermint extract, butter and corn syrup in a large mixing bowl.
Add in 4 cups of powdered sugar and stir until well combined.
Continue to add in the remaining powdered sugar until the dough is completely smooth and it’s all absorbed.
Divide the dough into portions.
Add red food coloring into one portion of dough, green to the second and leave the third white.
Scoop each of the dough colors into as many 2 tablespoon-size balls as you can make.
Place sugar in a bowl or on a plate.
Roll each of the balls into the sugar.
Place each dough ball onto a cookie sheet, about 2 inches apart and flatten with a fork.
Allow the peppermint cookies to air dry for 24 hours before enjoying.
How Long do Peppermint Christmas Cookies Last?
These peppermint cookies for Christmas are amazing. They last for a good, long time on the counter. I typically say that cookies last 3-5 days before they get dry and crumbly and less-than-desirable. But these peppermint Christmas cookies last SO LONG on the counter.
You can put these peppermint meltaway cookies in an airtight container and keep them on the counter for at least a week, if not two, and they won’t dry out or get hard. They’re best dried out, even, because they melt in your mouth.
No need to refrigerate these cookies–they will sit on the counter and be good for-EVER.
Can You Freeze Peppermint Cookies for Christmas?
Sure, I guess you could, but you really don’t need to. If you don’t plan to eat these peppermint meltaways immediately, or even in the next week or two, then you can put them in an airtight container and pop them in the freezer. Just take them out and eat them immediately if you like cold cookies or let them defrost.
You could even freeze the cookie dough, then just take it out and let it defrost before making the balls and letting them dry.

These are beautifully festive for the holiday season but what I love even more is that you elected to call them ‘Christmas’ Peppermint Cookies. So bravo! I noticed your recipe featured on Ramona’s Inspire Me Monday post, which is what brought me to your site. I was expecting a baked cookie but instead, you shared what I’d call a peppermint patty without the chocolate or a mint meltaway as you described them which is a cool idea. I like making Peppermint Cathys as DH calls them for Christmas and many times I’ve pitched the mint center to taste test thinking, mmm this would make a good melt-away. I may try your recipe in December because there’s something very special about mint and Christmas! Thanks for sharing and have a wonderful day!
