For the Cookies:
- 1 Stick Unsalted Butter, softened
- ½ Cup Granulated Sugar
- 1 Egg, room temperature
- 2 Cups All-Purpose Flour + extra for rolling
- ½ Teaspoon Baking Powder
- ¼ Teaspoon Salt
- Flower Cookie Cutter (with six petals)
- 5-6 Ounces Blue Rolling Fondant
- ½ Stick Unsalted Butter, softened
- 1 Cup Confectioners’ Sugar, sifted
- 1 Tablespoon Milk
- Wilton Icing Tip #4
- In a large bowl, cream together butter, sugar and egg. Set aside.
- In another bowl, sift together flour, baking powder and salt.
- Slowly add dry ingredients into wet ingredients and mix until cookie dough forms.
- Wrap cookie dough in plastic and freeze for about a half hour.
- Remove cookie dough from freezer and line a cookie sheet with parchment paper.
- Preheat oven to 375 degrees F.
- Roll cookie dough with a rolling pin (sprinkled with flour) until it’s about ¼ of an inch thick.
- Cut out 12 flower-shaped cookies and place gently on lined baking sheet. There may be leftover cookie dough - form it into a bowl and wrap with plastic. It can stay in the refrigerator for up to a week.
- Bake for 7-9 minutes or until edges are a light golden brown.
- Allow to cool completely on a wire rack.
- Roll out the blue fondant until it’s about ¼ of an inch thick. Using the same flower cookie cutter, cut out 12 flower fondant pieces.
- Press a flower fondant piece on each cookie.
- In a large bowl, use an electric mixer to beat together butter, confectioners’ sugar and milk. Beat on low and gradually increase to high. These ingredients will make up the buttercream frosting.
- Once the ingredients are smooth and form semi-stiff peaks, the buttercream is ready. Scoop into a piping bag with Wilton icing tip #4.
- Frost each cookie with a snowflake design. To achieve the look, start by piping out a vertical line down the middle (use the cookie’s petals as your guide).
- Pipe out an X across the cookie, again use the original line and the petals as your guide. Then, pipe out a circle in the center of the line and “X”.
- For each snowflake “branch,” pipe out two “V” shapes, one on top of the other.
- Repeat for each cookie. Serve and enjoy!
