If you’re like me, you’re always on the hunt for stellar Cookie Recipes. These Fondant Bunny Sugar Cookies are my new favorite obsession. Not only do they allow me to channel my inner creative side but then I get to eat and indulge in them after I’m done as well!

You’ll love taking the time to make these adorable cookies. They’re certain to have you “hopping” back to the kitchen for “just one more bite!”

WHAT YOU NEED TO MAKE BUNNY SUGAR COOKIES with fondant
To make the cookies:
- 1 cup of sugar
- 1 stick unsalted butter, softened
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour + a bit extra for rolling
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cookie cutter shaped like a bunny
To decorate:
- 5-6 ounces purple rolling fondant
- 5-6 ounces pink rolling fondant
- ¼ cup of softened unsalted butter
- 1 cup of confectioners’ sugar
- 1-2 tablespoons of milk

HOW TO MAKE FONDANT BUNNY SUGAR COOKIES
For the cookies:
Grab a large bowl and cream together the sugar, butter, egg, and vanilla.
Once you have that mixed well, grab a small bowl. Start to sift together flour, baking powder, and salt.
Now that everything is sifted nicely, you’re going to slowly add dry ingredients into the wet mixture. Mix until a cookie dough forms.
Once it’s formed, take and wrap the cookie dough in plastic and put in the refrigerator for at least 30 minutes.
After that time has passed, take out the cookie dough and preheat the oven to 375 degrees F.
Prep your baking sheet by lining with parchment paper and set aside.
Add some flour to your rolling pin and put a bit extra on your table area. Start to roll out the dough until it’s about ¼ of an inch thick.
Next, it’s time to make 14-16 bunny cookies using your cookie cutter.
Put each bunny cookie on the baking sheet and bake for 6-7 minutes.
Allow cooling once done baking.
To decorate:
Use your rolling pin to roll out the fondants.
Take your bunny cookie cutter and cut out 7-9 bunnies from each fondant color. Set aside.
Grab a medium-sized bowl and add butter, confectioners’ sugar, and milk.
Mix together using a mixer until combined. Start low and increase to high.
Add a thin layer of your newly mixed buttercream onto the center of each cookie.
Take and press one bunny fondant on top of each one.
Take and scoop the remaining buttercream in a piping bag, with Wilton tip #21 attached at the tip.
Don’t forget the cute little bunny tail! Add a buttercream tail on each cookie.
Serve and enjoy!

TIPS FOR MAKING FONDANT BUNNY SUGAR COOKIES
These cookies are pretty straight-forward once you get going, but here are a few tips to help you along the way. Once you start making the first few, you’ll get the hang of them real quick!
- Make certain that you use your rolling pin to get out any of the bubbles or waves in the fondant. You’re wanting the bunny fondant layer to be as smooth as possible.
- If you need to add a thin later of buttercream frosting all over the whole cookie, do so. This is fine and will just add a bit more sweetness overall to the cookie.
- Let the cookies cool completely once they’re baked or the fondant won’t stay secure if they’re too warm.
- Fondant isn’t sticky to work with but try not to stack any of the completed cookies on top of each other once done. There’s always a chance that it might cause the cookies to stick and tear the fondant on some of the other cookies.
