These Mini Lemon Pies are the perfect size for one person to enjoy. Besides who really wants to share pie anyway?
We love easy pie recipes at our house and these handheld pies are the best! And the best part? Each person gets their very own little mini pie to enjoy! No sharing required at all!

WHAT YOU NEED TO MAKE lemon Hand pies
- 1 can lemon curd
- 1/8 cup sugar for dusting
- 1 egg white
- Pastry or pre-made pie crust
- 1/3 cup cold butter, unsalted
- 1 cup flour
- 1⁄2 tsp salt
- 3-4 tbsp cold water
Additional items:
- 3” round cutter
- pastry cutter

HOW TO MAKE mini lemon Hand pies
You start this simple recipe by preparing the pie pastry. To do this, you need to blend together your flour and salt. Once that is done, you’re going to take your cold butter and cut it into the mixture.
Slowly add in cold water by sprinkling it in until blended. It needs to be not to dry, not too wet.
Once done, roll out the dough. Then cut out 10 circles using 3″ cutters.
After they’re all cut, spread lemon curd in the middle but leave a 1/2″ border around the crust.
Make certain to cut a little “x” on the top of the 5 circles that are going to be the top part of your mini lemon pies.
Take your tops and press to seal them to the bottom crust using fork tines.
Once they’re sealed, brush the tops with egg whites and then sprinkle with sugar.
Pop in the oven and bake for 20-25 minutes at 350 degrees.

WHAT HAPPENS IF THE SEAMS OF THE PIE CRUSTS DON’T GET SEALED?
This isn’t good! If you don’t get a good seam for your mini pies, it means that all the goodness is going to leak out of the middle. You don’t want this to happen. Instead, make certain that you check and double check that you’re got the seams good and closed before baking.
How do I know when mini lemon pies are done baking?
You’re going to have to pay attention to the crust. Once it starts turning a golden brown, that’s going to be your cue to pull them from the oven.
How do I store Mini Pies?
The best way to store them would be to have them in an airtight container and keep them stored in the fridge. If you want to have them warm when you’re eating it, just simply pop it into the microwave for a few seconds to get it a tad bit warm.
