Blueberries are not only sweet, but they taste really, really good with all the other ingredients that you’ll find in this pie. Trust me on this one…one slice of this homemade pie isn’t going to be enough.
WHAT YOU NEED TO MAKE a creamy BLUEBERRY PIE
Crust
- 1 9-inch graham cracker crust
Filling
- 8 ounces cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla
- ¾ cup heavy cream
- 1-pint blueberries
- 3 tablespoons apple jelly
HOW TO MAKE BLUEBERRY CREAM PIE
Start by creaming together your sugar, cream cheese, and vanilla in a mixing bowl. Then, whip the cream in a different bowl and slowly fold it into the cream cheese mixture.
Put the mixture into the crust and spread it evenly about. Next, top with blueberries.
Put the apple jelly in a little pan over heat (low) until it liquifies. Then, spread it over the top of the blueberries on the pie using a brush.
Chill the pie for at least 4 hours before serving.
What happens if I don’t soften my cream cheese enough?
Don’t make this mistake! If you don’t soften your cream cheese, then your pie is going to be lumpy. It’s just as simple as that. You need to make certain that your cream cheese is nice and softened so that it spread easily and is a smooth texture.
Can I use frozen blueberries for this pie?
I wouldn’t. The problem with using frozen blueberries is that they’re going to unthaw. What that means is that there will then be an excess of liquid in your pie that is going to cause it to be a mess.
For this recipe, fresh blueberries are best and recommended.
Do I bake the pie crust at all?
Not for this pie! You’re just going to use a graham cracker crust so there isn’t any baking needed at all. You’ll only have to turn on your stove for the apple jelly but besides that, you don’t need your oven at all. Talk about the easiest pie recipe, ever.
