Who says that hot chocolate is “just” a beverage anymore? These Hot Chocolate Cookies are about to change your mind. They’re not only delicious, but they take away the need for a piping hot cup of hot chocolate because they taste exactly like it!
If you’re looking for one of the best Christmas cookies out there, you can’t go wrong with this one. One bite and you’re going to be hooked. (you might even decide that you’re going to make these cookies all year long!)
WHAT DO YOU NEED TO MAKE THESE HOT CHOCOLATE COOKIES?
- 2 Cups unbleached flour
- 1 Cup white sugar
- ½ Cup packed brown sugar
- ¾ Cup Cocoa Powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 Cup unsalted butter (softened)
- 2 Eggs
- 2 teaspoons vanilla extract
- 1 Cup Mini Chocolate Chips
- ½ Cup Mini Marshmallows
- 12 Large Marshmallows (cut in half)
- Chocolate Shavings (optional)
- Chocolate syrup (optional)
HOW TO MAKE HOT CHOCOLATE COOKIES
Start by preheating the oven to 350 degrees. Using parchment paper, line a cookie sheet.
Using a medium bowl, you’re going to want to cream the butter, white sugar, and brown sugar together. I recommend using a hand mixer to do this.
Next, add in the vanilla and eggs.
Once that is done, mix in the cocoa powder, baking soda, and salt. Slowly start to add in the flour, mixing well the entire time.
Carefully fold in the marshmallows and chocolate chips.
Once you’re done making the dough, you’re going to want to cover it with plastic wrap and place it in the fridge for at least 30 minutes.
Once the dough has had time to chill, you’re going to want to roll the dough into 1” balls and place them 2” apart on the baking sheet.
Then, before you bake them, flatten the dough out with the palm of your hand.
Once flat, take your finger and press in the center of the dough.
Put into the oven and bake for 9 minutes.
While the cookies are baking, take your marshmallows and cut them in half.
Once the time is up, remove the cookies from the oven and place the cut marshmallow into the center of the cookie. I like to place them with the cut edge down for a cleaner look. Then, drizzle with chocolate syrup.
Once done, place back into the oven for 2 minutes.
Then, remove from oven and sprinkle with chocolate shavings.
Let the cookies cool for at least 5 minutes before eating.
HOW CAN YOU TELL THESE COOKIES ARE DONE?
They’re going to be soft once they’re done baking. Just make certain that you cook them in the oven for the time needed. You’ll also notice that the edges start to crisp up a bit as well.
WILL THE MARSHMALLOWS SOFTEN UP IN THE OVEN?
They will. If they’re a bit older, they’ll be fine to use for this recipe. Also, keep in mind that once they cool down, they’re going to harden up as well. If you’re wanting to soften them up, you can pop them in the microwave for a couple seconds to soften up the marshmallow.
HOW DO YOU STORE LEFTOVER HOT CHOCOLATE COOKIES?
They need to be stored in an airtight container once they’re cooked. This will keep them as fresh as possible for as long as possible. And if you don’t think that you can consume them within a few days of baking them, just add them to a freezer proof container and store them in the freezer.
