I love strawberry truffles so much and this is such an easy recipe for Valentines treats that I couldn’t help but make some, just for a taste of chocolate goodness.
Literally one of the best truffle recipes ever, I think they’re pretty much the most fancy recipe for something so simple. And you get this amazingly complex flavor of chocolate and strawberry together in little bite-sized portions. So yummy.
What You Need to Make Strawberry Truffles
- ¾ cup heavy cream
- 2 10-ounce packages dark chocolate chips (a good quality chocolate is ideal)
- 1 1-ounce package freeze dried strawberries, blended into a fine powder
How to Make Strawberry Truffles
Place cream into a small sauce pan and over medium heat. Bring cream to a simmer, then immediately remove from heat.
Place one 10-oz package of the chocolate chips into a heat-safe bowl then pour over the cream.
Allow the chocolate and cream to rest for about five minutes on the counter.
Stir the cream and chocolate mixture until thoroughly combined.
Add all of the crushed strawberries except for one tablespoon of the strawberries.
Stir to combine.
Place the strawberry-chocolate mixture in the fridge for at least an hour.
Microwave the remaining chocolate chips in 30 second intervals, stirring between each interval, until completely melted.
Using a tablespoon, form the chilled chocolate mixture into balls.
Roll each ball in the melted chocolate and immediately add a sprinkle of crushed strawberries.
Allow the chocolate to harden for 20-30 minutes before enjoying!
These will melt in your mouth!
Tips to Make Strawberry Truffles
If you’ve never made chocolate truffles before, they can be kind of intimidating. They’re just so perfect in all the photos and you feel like you can really mess them up–believe me, I know. So, to help you first-timers out, here’s a few tips I have to help you make chocolate strawberry truffles without much fuss.
- If the chilled chocolate mixture doesn’t make pretty balls, do not panic! You’re ok, seriously. Just pop the chocolate mixture back in the fridge for 10-15 more minutes. When you get ready to make the balls again, melt the coating chocolate first, then pull the strawberry and chocolate mixture out of the fridge and make the balls.
- If you need your chocolate covered strawberry truffles to be done faster, you can pop them in the fridge or freezer to help that last coat of chocolate to harden faster. But there is a chance that you will get a weird film that I’m not into, so consider that before popping them in the fridge.
- Sometimes, if you’re using chocolate, it can be too thick for proper coating of balls like truffles. If you’re noticing that it’s not working out for you, you can add a teaspoon of heavy whipping cream. But not too much.
How Long Do Chocolate Strawberry Truffles Last?
I prefer to keep my strawberry truffles on the counter, in an airtight container. But because they come together so fast, I usually don’t make them days before serving, so I don’t keep them around long. They’re not going to spoil on the counter for 1-2 weeks and it’s not like they’re going to really “spoil” but they just won’t be as wonderful.
If you want them to last longer (like 3-4 months) you can refrigerate them, but there is a chance that you will get a weird film that I’m not into.
Can You Freeze Chocolate Truffles?
I’m not a big fan of freezing chocolate. if you do that, you sometimes get this weird film that just doesn’t look attractive and I’m not into that. So, I wouldn’t freeze my strawberry chocolate truffles, if I were you.
