Oh, these Chocolate Peppermint Cookies are so awesome. They’re one of the best Christmas cookie recipes I’ve ever made and definitely one of the kids’ favorites.
They’re simple enough to make, but you get this awesome looking cookie that then tastes great–and it’s perfect for taking to a Cookie Exchange party because they’re not likely to fall apart while you’re transporting them.

What You Need to Make Chocolate Peppermint Cookies
For the cookies:
- 1 egg
- ¾ cup sugar
- ¼ cup brown sugar
- 1 stick butter softened
- ½ cup chocolate chips, melted
- 1 cup flour
- ¼ cup cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup caramel chips
To decorate:
- 1 cup white candy melts
- 5-7 peppermints, crushed into small bits
How to Make Peppermint Cookies
Preheat your oven to 350 degrees and line a baking with parchment paper.
Cream the egg and both sugars together.Add butter and beat until smooth.
Mix in melted chocolate chip cookies.In a second bowl, sift together the dry ingredients.
Add dry ingredients into wet ingredients in 1/3 increments, stirring between each increment.
Gently fold the caramel chips into the cookie dough.
With an ice cream scoop (about. ¼ cup scoop capacity) place balls of cookie dough 2-inches apart on the prepared cookie sheet.
Bake the cookies for 11-14 minutes. Allow the cookies to cool for 5 minutes on the baking sheet then transfer them to a wire rack to cool completely.
Place white candy melts into a microwave-safe bowl and microwave in 30 second increments, stirring between each increment, until the chocolate is completely melted.
Place melted chocolate into a piping bag and pipe in a messy drizzle over each cookie.
Immediately sprinkle crushed peppermints over the cookies.
Allow the chocolate to set completely.

HOW LONG DO Peppermint Cookies
On the counter, they don’t last long at my house. They’re exactly what the kids seem to focus on when it’s time to grab a snack. If you can keep the kids out of them, though, these cookies can rest on the counter for 3-5 days in an airtight container.
If you’d like to keep them a bit longer than that, even, plan to take that airtight container of cookies and pop it in the fridge.
In the refrigerator, the cookies should last 12-15 days no problem.
CAN YOU FREEZE CHOCOLATE Peppermint Cookies
So…you’re going to make a ton of cookies and save them for the big party? And you need to store them for longer than 15 days? Well, have I got a plan for you! These traditional Christmas cookies will freeze really well.
Just put them in that single-layer in the airtight container and you’re welcome to pop them in the freezer. That way they’ll last 3-5 months, or as long as you can manage to keep the kids out of them..
When you’re ready to have a chocolate peppermint cookie, you’ll just pull them out, let them thaw on the counter and you’re good to go!
TIPS FOR BAKING Christmas cookies
Oh, your peppermint chocolate Christmas cookies came out flat? That’s too bad. Good news, though? I have a handful of tips to troubleshoot your flat cookies:
- The oven was too hot. If you didn’t set the oven to a higher temperature than the recipe called for, your oven might need to be calibrated.
- The oven was cold. Yeah, if your oven wasn’t fully preheated or never reached the required temperature, the cookies might not have risen. So, again, if you didn’t pop your cookies in the oven too early, then you might need to calibrate it.
