These are a soft and chewy cookie, but they’re incredibly easy.
And the best part? These are a no-bake cookie recipe that I remember my mom making when I was a kid. And now I’m old enough to eat as many as I’d like!

What You Need to Make Bourbon Cookie Balls Recipe
- 1 cup vanilla wafer crumbs
- 1 cup finely chopped pecans
- 1 cup confectioners sugar
- 2 tsp unsweetened cocoa powder
- 1/4 cup Jim Beam Bourbon
- 1 1/2 tsp light corn syrup
- 1/3 cup confectioners sugar

How to Make Bourbon Cookie Balls Recipe
In a medium bowl, whisk together the wafer crumbs, pecans, cocoa and 1 cup of the confectioners sugar.
In a second bowl, combine the corn syrup and bourbon together completely.
Slowly add the crumb mixture to the bourbon mixture and stir until combined.
Roll the doughs into 1 inch balls.
Next each cookie ball gets rolled in powdered sugar.
Place the cookie dough balls on a baking sheet lined with parchment paper.
Refrigerate overnight.
Enjoy and store in an airtight container.

Well, again, these particular bourbon ball cookies shouldn’t fall into the cakey category ever, because they are a no-bake cookie that sincerely is so simple, you can’t mess them up.
