Seriously one of the best Cookie Recipes because you can make these without even heating up the kitchen. My mom used to make a huge batch of these when we were kids and take them to work with her.

What You Need to Make No Bake Oatmeal Peanut Butter Cookies
- 1/2 Cup Unsalted Butter (Cut into Pieces)
- 1/2 Cup Whole Milk
- 3/4 Cup Brown Sugar (Packed)
- 3/4 Cup White Sugar
- 1/4 Cup Unsweetened Cocoa Powder
- 3/4 Cup Peanut Butter
- 1 1/2 Teaspoon Vanilla Extract
- 1/4 Teaspoon Salt
- 3 Cup Quick Oats
- 1/3 cup coconut & some to garnish (optional)
- 8-12 Pieces of Caramel (optional)

How to make No Bake Oatmeal Peanut Butter Cookies
Place butter, milk, brown sugar, white sugar, salt, and cocoa powder in a saucepan over medium heat.
Stir continuously until butter is completely melted.
Increase to medium heat and bring mixture to a boil.
Boil for 1 1/2 minutes.
Remove butter mixture from heat and immediately stir in peanut butter and vanilla.
Stir in oats and coconut, mixing until the oatmeal is completely covered.
With a spoon or cookie scoop, dip 1 tablespoon of oatmeal mixture onto cookie sheets with parchment paper, placing each scoop about 2 inches apart.
Sprinkle each cookie dough scoop with coconut flakes.
Place caramels in a small microwave-safe bowl and microwave in 30 second increments, on power level 5, stirring between each increment, until caramel is completely melted.
Drizzle melted caramel over the cookies and allow them to cool completely before enjoying
Tips to Make No Bake Oatmeal Peanut Butter Cookies
First, definitely use parchment paper to line your cookie sheet with. Because of the stickiness of these no-bake cookies, you’re going to have problems with sticking if you don’t line it. Every. Time.

HOW LONG DO No Bake Oatmeal Peanut Butter Cookies LAST?
If you want save these awesome no-bake cookies, good luck. Seriously, they disappear fast off the counter at our house. But, if you’re making them for an event and you need to save them for a couple of days, they’re going to be fine on the counter for 3-5 days in an airtight container. If they will all be eaten within a few days, you could store them in a cute cookie jar.
If you want your cookies to last even longer, you can store them in the same airtight container in the fridge and they’ll last for 12-15 days then. But, because I don’t care for cold cookies, I like to let them sit out on the counter for a while before snacking.
I would not recommend freezing these no-bake cookies as they will get that weird film on them.

Are No Bake Oatmeal Peanut Butter Cookies Gluten-Free?
No, mine aren’t. However, these cookies are one of the EASIEST to make gluten-free. All you have to do is find gluten-free oatmeal and you’re fairly safe.
You’re still going to want to check the labels of all the other ingredients, but the primary gluten-carrying item in this cookie is the oatmeal.
So, if you switch that out, you’re well on your way to a no-bake gluten-free cookie!
