It’s just not holiday season if you don’t have some delicious homemade Fat Gingerbread Man Cookies. Not only does everyone love the story of the gingerbread man, but they truly are some of the best Christmas cookie recipes as well.
They’re fun to look at but don’t let their adorable features stop you from enjoying a bite or two! (or the whole thing!) Grab a glass of milk and snuggle down in front of the fireplace to make this the perfect dessert to end a cold, winter day.
WHAT DO YOU NEED TO MAKE GINGERBREAD MAN COOKIES?
For the cookie batter:
- 1/2 C unsalted sweet cream butter, softened
- 1/2 C sugar
- 1/2 C molasses
- 1 large egg
- 1/4 C cold water
- 3 1/2 C flour
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/4 tsp allspice
For the icing:
- 2 egg whites
- 1/2 tsp cream of tarter
- 1/2 tsp vanilla
- 3 C powder sugar
- 1 disposable piping bags fitted with a number 2 tip

HOW TO MAKE GINGERBREAD MAN COOKIES
Start by preheating the oven to 350 and lining the cookie sheet with parchment paper. It’s best to use a stand mixer if possible and start beating together the butter, sugar, molasses, and egg.
Once done, you’re going to want to add in the water and mix well until combined.
Next, take a large bowl and combine the flour, and the spices. Slowly start to mix in the dry ingredients with the wet ingredients.
Once combined, take your dough and start to roll it out on a floured surface. Try to roll it to about 1/4 inch in thickness. Take your gingerbread man cookie cutter and make your cookies.
Once done, place them in the oven and bake them for 10 minutes. Let the cookies cool completely before adding on the icing.
To make the homemade icing, you’ll need to use your mixer again and combine the egg whites, cream of tartar, vanilla and powder sugar.
You’ll want to mix those until combined and stiff peaks will start to form.
Once that happens, scoop the icing into the piping bag and start to decorate your cookies.
Let the icing dry for about an hour and enjoy!
WHAT HAPPENS IF MY GINGERBREAD COOKIES ARE CRACKING IN THE OVEN?
If this is happening, you might be rolling your dough just a little bit too thin. It needs to have a little thickness to it so it stays together when it’s backing in the oven.
Is These cookies SOFT OR HARD?
They should be soft when you’re biting into them. The outer edges might have a crispy crunch, but the middle of the cookie should be nice and soft.
HOW DO YOU SOFTEN HARD GINGERBREAD COOKIES?
If you notice that your cookies are a little harder than you want them to be, don’t fret. You can easily soften them by placing a slice of apple in an airtight container with the cookies. Trust me, it works!
If you’re eating them a day or so after you’ve baked them, you can also just reheat it in the microwave for a few short seconds to give it a softer taste and texture as well. The best way to keep them as soft as possible after cooking them is to store them in an airtight container.
