Let me show you how easy these 4th of July Jello Cupcakes are to make. The kids will love the color surprise inside as they eat them. Yes, you can make poke cupcakes with Jello!

Ingredients for jello poke cupcakes
- 1 box white cake mix, prepared as cupcakes
- 1 package red gelatin (I used strawberry Jell-o)
- 1 package blue gelatin (I used berry blue Jell-o)
- 2 cups boiling water
- 2 containers white icing
- Red, white, and blue sprinkles
How to Make Red White and Blue Cupcakes
First, cook the boxes cake mix according to the directions on the back of the box for cupcakes. I love to use festive cupcake liners.
Once the cupcakes are done, all them to cool completely, then use a straw to poke holes in each cupcake.
Combine each of the gelatin flavors, in separate bowls, with one cup of boiling water and stir until the gelatin is dissolved.
Allow the gelatin to cool completely, then use a spoon to pour each color into the holes on the cake, alternating the colors to create red and blue stripes, like the colors of the United States flag.
Place the cupcakes in the refrigerator to chill for one hour, then top with icing and sprinkles before serving.

Can I let the cupcakes set in the fridge overnight?
Yes, you can. The longer they sit with the Jello the more moist they will be. You can wait and ice them once you’re ready to eat them.
Can I Freeze jello poke Cupcakes?
You can! I would freeze them before icing them. Or, you can even just freeze the cupcakes before you poke the holes and add the Jello. Either way is fine.
